Spicy Beet and Millet Salad
Great contrast between the sweetness of the beets, the sourness of the lemon juice and slightly nutty taste of my favourite millet creates. I love a good dish like this, very tasty and healthy. Considering how much I love the beet and balsamic pairing – it's perfect salad.
Ingredients
- millet - 200g
- beetroots - 2 (cooked and diced)
- raisins - 50g
- almond flakes - 50g (roasted)
- lemon juice - 4 tablespoons
- balsamic vinegar - 1 tablespoon
- fresh parsley - a handful (chopped)
- fresh thyme - a handful
- ground nutmeg - a pinch
- sea salt - to taste
- rainbow peppercorn - to taste (freshly ground)
- olive oil - 2 tablespoons
Instructions
- Boil the millet according to package instructions. Let the millet cool down.
- In a large bowl combine all indigence. Season to taste with salt and pepper.
- Add a drizzle of olive oil and serve.
