Sourdough Pizza Bianca – white Pizza
I love pizza! I've made several white pizza recipes before and this is by far the best. I serve it with an arugula salad with lemon-olive oil dressing. Sometimes I brush the dough with garlic olive oil before adding the cheese sauce. The topping for this version can be slightly modified if you’d like. For example you can add asparagus or mushrooms, feel free to sub out the broccoli or use different cheeses. In my opinion this pizza recipes is fabulous!
Ingredients
- Sourdough Pizza Crust
- sourdough starter - 100g (white wheat)
- water - 150g (lukewarm)
- strong white flour - 350g + extra for dusting
- sea salt - 1 tablespoon
- olive oil - 1 tablespoon
- natural yogurt - 1 tablespoon
- semolina - for dusting
- White Cheese Sauce
- onion - 1 (thinly sliced)
- butter - 2 tablespoons
- plain flour - 2 tablespoons
- natural yogurt - 1 tablespoon
- Parmigiano Reggiano - 2 tablespoons
- ricotta cheese - 50g
- mozzarella cheese - 50g (grated)
- sea salt - to taste
- rainbow peppercorn - to taste (freshly ground)
- Pizza Toppings
- Buffalo Mozzarella - 1 ball (fresh)
- broccoli - 150g (tender-stem)
- mozzarella cheese - 50g (grated)
- oregano - 650g for sprinkling
Instructions
- Four to six hours before baking the pizza: mix together all ingredients for sourdough. Put the flour, salt, olive oil, yogurt and the starter into a bowl and mix well to form a soft dough.
- Knead for 10 minutes or until the dough is smooth and elastic.
- Cover with a clean cloth and let it rest. Leave the dough in warm place for 3-4 hours, until doubled.
- Meanwhile prepare the sauce. In a small saucepan over medium heat, melt 1 tablespoon of butter. Add the onion slices and stir to coat the onions with butter. Spread the onions out evenly over the pan and let cook, stirring occasionally. Cover pan. Stir onions every five minutes and check that they are not burning on the bottom of the pan. Cook for a further 10 minutes. Set aside.
- In second medium saucepan over medium heat, melt 1 tablespoon of butter. Add flour and stir until the butter and flour are well combined. Pour in water, stirring constantly as it thickens. Add more water depending on desired consistency. Add yogurt and mix well. Add the cheese and stir to melt. Remove the sauce from heat and add caramelised onion and season to taste.
- Preheat your oven to 240°C.
- Transfer the dough to sprinkled with semolina surface and flatten it with your hands.
- Transfer flattened dough onto the 30x40cm deep rectangle form tin generously dusted with semolina.
- Spread the white cheese sauce over the base, leaving a 2cm border around the edge. Top the pizza with mozzarella, place baby broccoli and sprinkle with grated cheese and oregano.
- Bake pizza one at a time until the crust is browned and the cheese is golden, about 15-20 minutes.
