Green Pea and Pickled Gherkin Salad
The sweet peas go so well in the mayonnaise with the contrastingly salty gherkins and I like to add a touch of fresh parsley for even more freshness. Ingredients
- sweet peas - 1 tin (drained)
- pickled gherkins - 3 (diced)
- mayonnaise - 3 tablespoons
- sea salt - to taste
- rainbow peppercorn - to taste (freshly ground)
Instructions
- Combine all of the ingredients thoroughly in a bowl (sweet peas, pickled gherkins, mayonnaise).
- Season with plenty of ground rainbow peppercorn and salt and mix well.
- Garnish with parsley (if you like) and serve with brown bread or baguette.
