Green Asparagus Quiche
A custard like, egg filling with fresh dill, smoked salmon, asparagus and pear that all comes together in this simple delicious quiche. Can be made completely in advance, making it perfect for holiday time entertaining...easy, simple, and beautiful! This asparagus quiche recipe would work well in a picnic with a seasonal summer salad.
Ingredients
- Pastry
- plain flour - 200g
- butter - 100g
- egg - 1
- sea salt - half a teaspoon
- oregano - half a teaspoon
- Filling
- eggs - 5
- crème fraîche - 150ml
- asparagus - a bunch
- cold smoked salmon - 100g
- pear - 1 (peeled, cored and sliced)
- dill - 1 tablesppon (chopped)
- sea salt - to taste
- rainbow peppercorn - to taste (freshly ground)
Instructions
- Combine the flour, butter and oregano until they form fine breadcrumbs. Add the egg and bring the mixture together until it form a dough. Roll it into a smooth ball, wrap in cling film and refrigerate for 30 minutes.
- Preheat the oven to 180°C.
- Once the dough has rested, roll it out and thickness of about 5mm and 5 cm larger than the tin. Using the rolling pin, drape the pastry over the fluted flan tin, then gently push it into the contours. Trim any excess pastry, then chill for 10 minutes until firm.
- Bake for 15 minutes until golden. Cool to room temperature.
- Meanwhile steam the asparagus until just tender to the point of a knife – about 4 minutes. Dry briefly on kitchen towel.
- Preheat the oven to 180°C.
- Spread the asparagus over the pastry base, then lay the smoked salmon and pear in between the asparagus.
- Whisk together the eggs, crème fraîche, seasoning and dill, then pour over the asparagus. Bake in the oven for 25 minutes until the filling is just set and lightly gold. Leave to cool.
