Cold Lithuanian Borscht
This is one of the best cold soup to eat in the summer. Since I can remember, my mother-in-law always made this for our family. And I do the same for my family! Fresh cucumber and radish give the soup the delicate freshness of summer. It is very girl 'soup - pink... rather fuchsia colour. I hope that boys will like it too.
Ingredients
- beetroots - 500g (cooked)
- cucumber - 1 (larger size)
- radish - 250g
- dill - a bunch (chopped)
- kefir - 500ml
- buttermilk - 1000ml
- eggs - 3 (hard boiled)
- lemon juice - to taste
- sea salt - to taste
Instructions
- Cut up beetroots into pieces and blend using blender.
- Chop the eggs, radish and peeled cucumber into small dice.
- Put all diced ingredients in a large bowl and pour the kefir and buttermilk. Gently mix.
- Season with salt and lemon juice. Add chopped dill.
- Refrigerate until well chilled.
