Berry Crumble Cake – Streuselkuchen
Mixed berry crumble cake is the best way to enjoy summer berries! A lovely and light berry cake with a delicious crumble-like topping. If you looking for something to do with a glut of berries in your garden - try this recipe. It makes a nice difference to the usual crumbles and pies. A lovely moist cake and crumble topping ads extra texture.
Ingredients
- mixed berries - 600g (raspberries, blackberries, blueberries, strawberries)
- caster sugar - 2 tablespoons
- lemon juice - 2 tablespoons
- potato starch - 1 tablespoon
- Streusel - Crumble
- plain flour - 350g
- caster sugar - 180g
- butter - 250g
- egg - 1
- salt - a pinch
- backing powder - half a teaspoon
Instructions
- Preheat the oven to 180°C.
- For the crumble: sift the flour into a mixing bowl, add the butter, sugar, salt, backing powder and rub the mixture together with your fingertips until it resembles breadcrumbs. Continue rubbing in until the mixture begins to stick together to form small pea-size clumps.
- Spread evenly half of the mixture into the greased 22cm deep round form tin.
- Bake for 10-15 minutes until golden. Cool to room temperature.
- Meanwhile prepare fruit mix - in a smaller bowl, stir together berries, sugar, lemon juice and potato starch.
- Spread the berry filling over the crust and then spread the rest of streusel mixture over the top.
- Bake for 35 minutes until the topping is richly golden brown.
