Shopping – simple rule:
When you buy products low-processed without additions, you avoid eating such substances as glucose-fructose syrup, artificial flavours, carrageenan, stabilizers, thickeners, palm oil, preservatives.
E14xx – Modified Starch is a chemically altered food ingredient made from starch (corn, potato, tapioca, rice, wheat). What is modified starch? This is not a GMO! Starch derivatives, are prepared by physically, enzymatically, or chemically treating native starch to change its properties.
Starches may be modified:
to increase their stability against excessive heat, acid, shear, time, cooling, or freezing
to change their texture
to decrease or increase their viscosity
to lengthen or shorten gelatinization time
to increase their visco-stability
to use as a fat substitute for low-fat foods
to use as an emulsifier for salad dressings in order to keep oils from separating
There are numerous ways that food starch can be modified:
treating it with acid
treating it with sodium hydroxide
treating it with potassium hydroxide
adding a positive electrical charge
treating it with emulsifiers
treating it with starch ether
Sometimes a starch may undergo more than one treatment, depending on the desired outcome.
Because starches are modified for so many different reasons, you may find them in a variety of places: chips,canned soups, instant pudding, low-fat ice cream, cheese sauces, powder coated foods such as cocoa-dusted almonds, candy, capsules that contain some medications.
Modified starch eaten in excess – blocks the digestion of fats and cheating the brain, greatly delaying or blocking status information about satisfy hunger. Modified starch consumed rarely – does nothing (does not help anything).
