Jeane’s Favourite Chocolate Cake
This is a real old-fashioned chocolate cake. It's very moist and very chocolatey, this cake is extraordinarily good!!! I got this recipe from my beloved neighbour Jeane, after her visit in our house and trying my gingerbread. I got 8 points out of 10 for my cake. Jeane compared my gingerbread with the cake that she ate in her childhood. It was very, very nice.
Later she sent me this recipe via email ... and Jeane said that she can’t bake, and the last attempt almost ended up burning the kitchen.
I had to make this cake and in my opinion it is very good ... I hope that Jeane loved it too!
- dark chocolate - 50g
- unsalted butter - 150g
- caster sugar - 280g
- plain flour - 120g
- eggs - 4 (separated)
- cocoa powder - 3 tablespoons
- strong coffee - 125ml
- baking powder - 1 teaspoon
- fresh cream - 200ml
- dark chocolate - 200g
- Boil chocolate, cocoa, sugar, coffee and butter. Remove from the heat and leave to cool slightly.
- Put the egg yolks, the flour and baking powder in a large bowl and whisk until thick and pale. Gradually add melted chocolate mixture, then mix it carefully.
- Put the egg whites in a separate bowl and whisk until stiff but not dry.
- Stir the egg whites into the chocolate mixture and stir it gently.
- Preheat the oven to 180°C.
- Line the base of the tin with parchment and place it inside the tin (22cm round springform cake tin, 4-5cm deep) and spread the mixture into it.
- Bake for 45 minutes or until a skewer inserted into the centre of the cake comes out clean.
- Take the cake out of the oven and allow it to sit at room temperature. Carefully remove from the tin.
- Meanwhile prepare chocolate topping: pour the fresh cream into a small saucepan over medium heat and cook, stirring occasionally, until the liquid comes to a boil. Remove from heat and add crushed chocolate. Stir to dissolve chocolate about10 minutes. Pour the chocolate cream over the cake and smooth. Decorate with nuts or chocolate and serve.
