Homemade Cucumber Raita
Fast & easy.... This is a really good recipe and so simple to make and it is perfect for cool down my vegetable curry. A cucumber raita helps to balance the flavour of spicy Indian meals. I prepared it with Glenisk Organic Bio Live Yogurt because I tested the yoghurt. You can use any yoghurt which gives the raita perfect consistency. I most prefer Greek style yoghurt.
- natural yogurt - 100ml (Greek style yogurt)
- cucumber - ½ (grated)
- green chilli - 1 (seeded and chopped)
- salt - to taste
- ground cumin - ½ teaspoon
- fresh coriander - for garnish
- Combine all ingredients in a bowl and beat until smooth.
- Season to taste with salt.
- Chill raita, covered, until ready to serve.
